Order Field Sets are named collections of custom fields attached to a product so that specific information is captured at order time. For example, a personalized product might use an order-field-set to collect an engraving message, or a service might collect an appointment preference, during checkout. You define the set and its fields (label, type, options, required) in the admin and attach it to the relevant product(s). When the customer buys, those fields are presented and their answers are captured with the order line — making custom, per-order data collection part of the purchase flow rather than an afterthought.
